Pepperoni Pepper Pasta


Hello!
Checking in with another favorite quick dinner idea.

This recipe I found about three years ago online and adapted it to our taste.
We love it because it is a break from ground beef and chicken,
which I feel like we eat all the time.

It is one of those perfect meals that doesn't require thawing meat.
You can seriously make it in about 15 minutes which is perfect for Wednesday nights when we are scurrying around to get to church on time.

You need:
one package of pepperoni
one jar of spaghetti sauce
pasta 
{we have used all kinds but prefer bow tie or mini spaghetti}
sliced black olives
grape tomatoes
and two bell peppers


Start by washing and chopping your peppers and a large handful of tomatoes.
We all love tomatoes, so the more the merrier at our house!


Toss them into a large skillet with your {drained} canned olives.
No oil needed.
Turn your heat on low and toss often.


As your peppers start to soften, start your water to boil for your pasta.


Give about half the bag of pepperoni a good chop.
If you can find the mini pepperoni, you can use those.
They are a lot of fun and can help eliminate this step.
{We do half the bag because it can be pretty spicy for the kids!}


Boil your pasta until just done.
Throw in your pepperoni and continue tossing on low heat.


The pepperoni provides plenty of oil to cook the peppers!
Add your entire jar of sauce on top.


Drain your pasta and add it to your skillet.


Stir everything, keeping your heat on low to finish cooking your noodles through.


Serve!
This is a meal in itself, but a salad is always perfect with this dinner.


It has a great texture: the bite of the real tomatoes in the sauce and the crunch of the peppers paired against the spiciness of the pepperoni make it interesting for adults, but yummy and easy for kids!

Our kids love it!

  1. Love your quick and easy meals!!!! I work full time and have two businesses on the side and have a decent commute home in the evenings (usually a little over an hour)... these quick meals are LIFE SAVERS!!! We may be having this tomorrow night!

  4. I just wanted to let you know that I gave this recipe to my sister ( a huge pepperoni lover). She made it a couple days ago and absolutely loved it! Now I can't wait to make it.
